Ok, first and foremost, I'm retarded. Now that's out of the way, I've installed "Conan Stats" an AoC combat log reader, but I don't know how to use it... I think I need another script that actually creates text files in my script folder regarding in-game combat information.

Main question:
What script do I need enabled to use the command: /combatlog on
And is that what actually start creating combat log text files?

in your chat window type /last all you need to know for now, it creates a script in your script folder, AoC combat tools is probablly a better choice as a parser
